Congratulations to Carole, Yvette & Thomas’ class who completed their workshop component of the Certificate II in Food Processing (Sales) FDF20911 from our Eastwood kitchens on Friday the 24th of October! On the last day students were each set a challenge dish, some were also required to produce a dish from a ‘mystery box’ of ingredients in the fridge. The results were fabulous, a tasty quiche, an impressive croquembouche, delicious melting moments, cake pops, peanut butter cupcakes, savoury muffins, fruit flans, a selection of éclair’s, lemon meringue pie, multi coloured/flavoured macaron’s and savoury pastries. Students are encouraged to be creative cooks when decorating/plating dishes as part of the merchandise products unit. This helps students to practice how food is presented in the industry and to experiment with different techniques. During the course students develop their baking, barista and savoury food preparation skills. A wide range of dishes are made including:

  • Eggs benedict, quiches
  • Savoury pastries
  • Foccacia breads, pizzas, club sandwiches
  • Biscuits – Anzac, Melting moments, chocolate chip
  • Choux pastries – profiteroles, eclairs
  • Cupcakes, cake pops, macarons
  • Bakewell tarts, lemon meringue pie
  • Cheesecake, tiramisu.. and many more!

Students also learn all about espresso coffee, the different terminology and styles of coffee, the coffee beans, texturing milk & latte art. Their barista skills are practiced throughout the course, so students leave the course as capable and confident baristas. The training is very hands-on and students develop an excellent skill level by week four.  Most are amazed at what they produce on the final day! Students leave our course confident and well prepared for the workforce, equipped with key skills for the food industry.

Our next Certificate II in Food Processing (Sales) FDF20911 – Introduction to Café, Sales & Barista starts on Monday the 24th of November from our Eastwood kitchen.
